i don't listen a lot a anime OST, but without a doubt i like theses ones :

Hehe....Mahoromatic OST's - either season one or two gets a play every day...but maybe that's just because I'm obsessed with Mahoromatic

-Gundam SEED and Gundam SEED DESTINY
-Initial D
-and any OST with music composed by Yoko Kanno (including Wolf's Rain, Cowboy Bebop, Escaflowne, and some others that I can't remember)

R.O.D. OST
Rurouni Kenshin, OVA OST 1&2
Mai-HiME, and haha, others.
