Unfortunately, we had over 1.5TB on there and virtually none of it was backed up (I don't want to think how much it would cost to buy that amount of dvd's). We ended up buying the same amount of storage again as the other half had a piece of proffessional software that managed to restore it all.
Quick transfer of it all to the new drives, the broken one in the bin, we managed to restore about 98% of it (it did take about a week to do, but as they say; patience is a virtue). The server is now just over 3TB, so I pray nothing goes wrong and we have to buy another 3 TB >.<
