Bit surprised you haven't seen Cowboy Bebop, so watch that. Also, if you liked Trigun, you might like Gun X Sword. It is not bad, better than I expected and fairly similar in content.

Also, good series to check out would be the TYPE-MOON series, Tsukihime and Fate/stay night. If you like mecha's then try one of the more original, Gundam 0079, but ONLY if you can look at the story and not the cheesy/crappy animation and voice acting.
